  • 2 cups ground beef
  • 1 onion
  • 1 tablespoon olive oil
  • 1 can crushed tomatoes or 8 Italian fresh tomatoes cut in small cubes
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup of cheddar cheese
  • 1 jalapenos pepper sliced

TEX-MEX CASSEROLE

 

It’s sometimes difficult to find the time to enjoy a meal with those we love. The meals cooked in one pot are a great option and easy to prepare on busy weeknight. This Mexican casserole is not only vibrant with flavors but is also a healthy meal that only takes 30 minutes to complete. Finally a meal that saves time without sacrificing flavor!

Last but not least this beef seasoned with taco spices topped with delicious cheese give a complete delicious meal that all the family will love. Fiesta!

You also can prepare this dish in advance freeze it up to a month. Defrost in the refrigerator overnight and cook for 20 minutes covered.

HOW TO COOK:

  • 1 Preheat oven to broil.
  • 2 In a frying pan add the olive oil and the onions and cook for 5 minutes.
  • 3 Add the ground beef, mix well and continue cooking for 3 minute.
  • 4 Add the spice and the tomatoes simmer for 12 minutes or until the beef is cooked.
  • 5 Add the cheese and the slices of the jalapenos on top of the beef mixture.
  • 6 Bake in the oven on broil for about 5 minutes.
  • 7 Serve on top of romaine lettuce if desired.
