These muffins are low-carb and are perfect for a quick breakfast or to take on the go! Avocados not only add flavor to this spicy muffin recipe, but they are also high in fiber and are high in healthy fats – specifically monounsaturated fats. While the fiber found in the avocados will help keep you feeling satisfied and full, the monounsaturated fats can promote weight loss and help decrease inflammation in the body.
HOW TO COOK:
Preheat oven to 350 degrees F.
Grease or line a muffin tin.
Chop onions and place in a large mixing bowl.
In the same bowl, add cheese, baking soda, and sea salt; place bowl to the side.
Using a skillet, cook bacon stove top on a low heat setting; cook until crispy.
Before removing skillet from the stove, add in grass-fed butter, and let melt.
Next, in the same mixing bowl, combine whole eggs, almond flour, flaxseed meal, psyllium husk powder, chives, cilantro powder, garlic powder, cayenne powder, coconut milk, and freshly squeezed lemon juice.
Gently crumble bacon.
Add bacon and butter to the mixing bowl.
Cut avocado, and scoop out.
Add to bowl and mix.
Pour batter evenly into muffin tin.
Bake for approximately 25 minutes.
To ensure muffins are cooked thoroughly, insert a toothpick into the center of a muffin. Muffin should come out clean with no batter.
