Ingredients

  • 2 cups ground beef
  • 1 onion
  • 1 tablespoon olive oil
  • 1 can crushed tomatoes or 8 Italian fresh tomatoes cut in small cubes
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup of cheddar cheese
  • 1 jalapenos pepper sliced

It’s sometimes difficult to find the time to enjoy a meal with those we love. The meals cooked in one pot are a great option and easy to prepare on busy weeknight. This Mexican casserole is not only vibrant with flavors but is also a healthy meal that only takes 30 minutes to complete. Finally a meal that saves time without sacrificing flavor!

You also can prepare this dish in advance freeze it up to a month. Defrost in the refrigerator overnight and cook for 20 minutes covered.

HOW TO COOK:

1.
Preheat oven to broil.

In a frying pan add the olive oil and the onions and cook for 5 minutes.
3.
Add the ground beef, mix well and continue cooking for 3 minute.
4.
Add the spice and the tomatoes simmer for 12 minutes or until the beef is cooked.
5.
Add the cheese and the slices of the jalapenos on top of the beef mixture.
6.
Bake in the oven on broil for about 5 minutes.
7.
Serve on top of romaine lettuce if desired.
